At Hungary Lane Organics, the changing seasons bring a delightful transformation to the menu, especially when it comes to lamb and beef. These meats are not just staples; they are the heart of many traditional dishes that celebrate rich agricultural heritage.

The Importance of Seasonal Eating

Eating seasonally means choosing foods that are in their prime during a particular time of year. This approach not only enhances flavour but also supports local farmers and reduces the carbon footprint associated with transporting food long distances. Seasonal eating is particularly important for meats like lamb, beef and pork, which can vary significantly in taste and texture depending on the time of year.

Benefits of Seasonal Meat

  1. Flavour: Seasonal meats are often more flavourful. Animals raised on fresh pasture produce meat that is richer and more complex in taste.

  2. Nutritional Value: Freshly harvested meats typically retain more nutrients compared to those that have been stored for long periods.

  3. Sustainability: Supporting local farms that practice sustainable agriculture helps protect the environment and promotes biodiversity.

Hungary Lane Organics: A Commitment to Quality

Hungary Lane Organics is dedicated to providing high-quality, organic meat and eggs. Our farm follows strict organic practices, ensuring that the animals are raised without synthetic fertilisers or pesticides. This commitment to quality not only benefits the animals but also results in healthier and tastier meat for consumers.

Organic Practices at Hungary Lane

  • Pasture-Raised: Animals are free to roam and graze on lush pastures of grass and herbal leys, which contributes to their overall health and the quality of the meat. we also incorporate the livestock with our cereals, grazing the winter wheat and rye with companion crops, aswell as growing cover crops over the autumn/winter keeping to soil protected and green with life for our soil microbes these are grazed and provide a fertile fresh start for our spring beans, wheat and buckwheat.

  • Natural Diet: The animals graze a natural diet that includes grass, herbs and forbs like there very own salad bar. we dont takeaway the unwanted weeds these too provide nutrients only animals know to use offering different nutrients, slowly these weeds (thistles docks) reduce in numbers with regular movements and long rests between stock ensuring all is grown creating a healthy eco system in the swards, which in tern pump more and sequester carbon into the soils ramping root growth and creating an immediate inpact on the top soil with faster regrowth amd healthy competition . Home grown grains, and legumes are grown on farm ensuring they (pigs and chickens) receive the nutrients they need to thrive, this in tern reduces brought in feed and closes the loop, all nutrients are fed and kept on our farm.

  • Animal Welfare: We prioritises the well-being of our animals, providing them with a stress-free environment that promotes natural behaviours. providing regular moves into different paddocks mimic there naturaul behaviour of grazing. Every field is made into manageable sizes helping provide shelter belts of hedge rows on all sides of our fields

Seasonal Highlights: Meat grown with care.

Lamb but not in the spring...

Breaking away from tradition, but with good reason.

Our pedigree Dorset sheep lamb out of the traditional season. Dorset sheep have the ability to lamb year round rather than just in the usual spring time. Our ewes lamb in September with meat ready from February onwards. We sell a proportion of our lamb to Waitrose on a Dorset scheme, as part of their mission to be able to supply year round British lamb. The rest of our lamb is sold directly to the general public, via our pop up farm shop (as and when meat is available).

By stepping away from the traditional lambing calendar, we’ve created a system that is both efficient and sustainable. Lambing outdoors in September benefits from longer days and warmer nights, making the process smoother and more enjoyable while promoting strong animal welfare.

Taking full advantage of the autumn flush of grass, our ewes thrive, they are milky and settled, giving lambs an excellent start from day one. As winter arrives, our cereal crops provide clean, high-quality grazing with no previous livestock exposure, helping to break worm cycles and reduce disease pressure. In return, the crops benefit from valuable natural nutrients.

Autumn lambing also significantly reduces parasite challenges commonly faced during the summer months. With fewer livestock to manage during peak summer periods, labour demands are reduced at an already busy time of year, allowing greater focus during harvest while maintaining a high-performing flock.

Popular Cuts of Lamb

  • Lamb Chops: Perfect for grilling or roasting, these tender cuts are a favourite for spring barbecues.

  • Leg of Lamb: Ideal for slow-roasting, this cut is perfect for family gatherings and special occasions.

  • Lamb Breast: the underrated cut that deserves far more attention, offering incredible flavour and versatility when treated with a modern approach. Far from the traditional meat-and-two-veg stereotype often associated with lamb, this cut can be stuffed, rolled, slow-cooked or crisped to create something genuinely exciting. One of the best ways to showcase it is by coating the lamb in a punchy garlic, ginger and sugar marinade, then roasting it low and slow until meltingly tender before crisping it up in the oven. Shredded and served with fresh spring onion and cucumber, it becomes rich yet vibrant, indulgent yet balanced – a delicious example of how a classic cut can be reimagined into something bold, contemporary and full of character. It's a firm favourite in our house.

Beef & Pork...

Alongside our well-established lamb, which we’ve been selling directly to the public for over 15 years, we’re excited to be expanding into beef and pork as a new venture on the farm. We’ve recently welcomed our first cows and pigs, which we’re breeding and rearing with the same care, high welfare standards, and respect for the land that have always guided our farming. While beef and pork won’t be available just yet, we’re laying the foundations now and look forward to offering seasonal, home-reared produce in the coming year. Please keep an eye on our website for updates as this next chapter grows.
