STEAK GUIDE...
Bavette Steak
Bottom sirloin area near the flank and skirt
Rich beefy flavour, juicy with an open grain so absorbs marinades exceptionally well. Develops a great crust when cooked over high heat.
Denver Steak
A cut from the upper blade of the chuck (shoulder) area. Very tender with marbling. Tastier than a flat iron due to more marbling
Flat Iron
Cut from the topblade of the chuck (shoulder) area. Very tender with marbling (but leaner than Denver) that gives a fantastic flavour. Very quick to cook and cheaper than other cuts. Smoother grain of meat makes it more tender than a Denver.
Minute/Frying Steak
Cut from the silverside of beef, rear quarters above the rump.
Extremely lean, quick to cook. Cook high and quickly and slice thinly against the grain to ensure tenderness. A cheaper cut that’s fantastic for a steak sandwich!
Chuck/Braising Steak
Unsuitable for pan frying, but extremely tender and flavourful when slow cooking. A good value, exceptionally tasty cut.
Rump Steak
Firmer and flavourful. Leaner with less marbling. Less expensive than the more premium steaks.
Sirloin Steak
A leaner cut with less marbling and a firmer texture. Medium tenderness. Outer fat cap adds excellent flavour while cooking. Fat can be trimmed off before cooking if you’d prefer a leaner, high protein steak.
Ribeye Steak
Juicy. Exceptionally Tasty. Tender.
Fillet Steak
Leaner. Extremely Tender. Delicate Milder Flavour.

35 days of dry-ageing unlocks a depth of flavour and tenderness that fresh beef cannot replicate. As the beef naturally matures, enzymes break down muscle proteins while moisture loss concentrates its flavour. The result is a deeper, more complex beef flavour, a more tender texture, and the rich, savoury character associated with properly dry-aged beef.
We are thrilled to sell our meat locally, right here in our village, and to the surrounding areas. The feedback from previous years of selling lamb has been exceptional, and we work hard to offer a product that is high quality, traceable, and fairly priced.
An important note about our first beef pop-up shop!
Our Red Devon cows arrived at the farm in August 2025. We chose this native breed after extensive research because they are a fantastic fit for our land and regenerative farming methods, and they have already made wonderful use of our abundant herbal lays.
To establish our herd, we carefully selected a regenerative farm in Cornwall with values closely aligned with ours. With approval from the Organic Soil Association, we purchased our starter herd from them. As this farm was not certified organic, the cows we purchased are not themselves certified organic. However, since arriving here, they have been farmed organically in accordance with Soil Association standards.
To enable us to produce our own organic beef, we had to establish a starter herd, and one of the cows purchased was intended to provide our first beef. Originally, we planned to keep this beef for ourselves and family, but due to the incredible demand, we have decided to make it available at our first Beef Pop-Up Shop.
Because this particular animal was born on the non-organic farm we purchased from, this beef will not be certified organic. This is an exception, as all offspring born from our herd going forward will be Soil Association certified organic, and our produce across the farm — including beef, lamb, pork, eggs and grain — is all organic.
We know this may sound a little confusing, but we wanted to be completely transparent and explain the situation clearly. We receive lots of enquiries about whether we buy products in to sell, as some farm shops do. We don’t. Our animals are raised here on our farm, and we do not buy in other farms’ meat, eggs or produce to sell.
Thank you for supporting us as we build our organic herd and continue growing the farm in the way we believe in
